Why This Peanut Butter Baked Oatmeal Is The Best!
My latest breakfast obsession is baked oatmeal. I’ve made several different variations but this hearty breakfast is one of my husband's favorite recipes! You can never go wrong with a combination of peanut butter, bananas and chocolate!
Healthy baked oatmeal is super moist, almost like an under-baked muffin. It is amazing served out of the oven with an extra drizzle of milk and more peanut butter or honey! It has the perfect peanut butter flavor. Plus you can even heat this up the next day for a quick breakfast on the go!
Key Ingredients
bananas- overripe bananas are best for this recipe.
honey- is a great natural sweetener for the recipe.
coconut oil- helps bind everything together and has a neutral flavor.
peanut butter - I prefer natural peanut butter because it has no added preservatives.
unsweetened almond milk- is my go to non-dairy milk but you can use oat milk, cashew milk or regular milk if you prefer
old fashioned oats- or rolled oats holds its texture best, while quick oats may get a little mushy and steel cut would need a longer baking time.
cinnamon- adds a great flavor with the peanut butter and bananas.
chocolate chips- use dark or milk chocolate chips to make the perfect chocolate peanut butter combo.
Step-By-Step Instructions
Start by mashing your ripe bananas in a large bowl. When bananas are ripe a fork will be all you need. Add the eggs, milk, honey, coconut oil and vanilla extract to the mashed banana. Mix well until the ingredients are blended together.
Add the dry ingredients oats, cinnamon and chocolate chips into the wet ingredients. Mix well and pour oat mixture into a prepared baking dish.
Bake in a preheated oven for 30 minutes. The oatmeal will be soft but the liquid will be absorbed. The baked oatmeal will be a golden brown color.

- Make this easy recipe in one bowl by first mashing the banana very well, mixing the remaining wet ingredients and then stirring in the dry ingredients.

Substitutions

almond milk- soy milk, coconut milk or any non-dairy milk can be substituted in this recipe. Regular cow's milk will work well too.

Can I Freeze Baked Oatmeal?
Yes! It is so easy to freeze and reheats with wonderful results. Just make your baked oatmeal as you normally would and allow it too cool completely. Wrap your entire baking pan in plastic wrap or foil and pop it in the freezer for when you need it!
or freeze individual portions in plastic wrap and place in a freezer safe container for an easier grab and go breakfast. Baked oatmeal is best eaten within 3 months of freezing.

Peanut Butter Baked Oatmeal
Equipment
- 8 x 8 baking dish
Ingredients
- 2 very ripe bananas, mashed
- ¼ cup honey
- 2 tablespoons coconut oil
- 1 egg
- ¼ cup natural peanut butter
- 1 cup almond milk
- 1 teaspoon vanilla extract
- 2 cups old fashion oats
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
- ¼ cup chocolate chips
Instructions
- Preheat oven to 375 degrees. Spray baking dish with cooking spray and set aside.
- In a large bowl mash bananas with a fork and add honey, coconut oil, egg, peanut butter, almond milk and vanilla extract. Stir very well.
- In the same bowl add oats, cinnamon, salt and chocolate chips. Stir everything well and pour into prepared baking dish.
- Bake in preheated oven for 30 minutes.
- Remove from oven and allow the oatmeal to cool for 10 minutes before cutting.

Hi Louise, I've never made this without banana but maybe try substituting apple sauce? Also look at my protein baked oats recipe. It does not have banana. Good luck!
